One of my goals to accomplish over the next few months is to start meal planning and prepping on Sundays.
I am juggling a lot during the week with taking care of my 6-month-old daughter and working from home simultaneously (I use zero forms of babysitters during the week), so anything I can do on the weekends to ease that burden a bit and make our home run smoother is something worth trying!
I used to just fly by the seat of my pants in regards to weeknight dinners, and would find myself at the grocery store several times a week to pick up tidbits here and there for those last-minute ingredients.
It wasn’t a problem to be spontaneous with my cooking back then, but now that I have a baby and very limited time during the week to devote to preparing and planning for food, running to the store for 1 or 2 measly ingredients isn’t happening. Many times we find ourselves either trying to make do with whatever we have around the kitchen to whip something up (this is usually not an appetizing option), or my Husband will go pickup some takeout for us (this unhealthy habit needs to stop).
I’d eventually like to get to the point where everything for the entire week (Monday – Friday) gets prepped on Sunday so we can just toss it together and cook it up during the week with minimal hassle or anguish over figuring out what we are going to eat every night.
For now, I’d be happy if I accomplish something as simple as just prepping ingredients for smoothies for the week; it would be a step in the right direction to help make our work weeks more successful in terms of eating healthy and saving money. Then over time I’d like to build up to my ultimate goal of doing most of the prep on Sundays. I somehow envision it as a fun family activity in the future….I’m likely delusional ;).

Like you, I have struggled with meal planning, actually I really can’t do it! Coming from a “planner” that’s probably a shocker to some, I’m wondering if you could update us about your successes/struggles with this? I have been thinking about meal planning a lot as we try to cut our grocery budget down a bit as well.

Hi Kelly! I’m a total Type-A planner as well, so I’m in the same boat! Many a time I have come up with a weekly plan and then completely fail on executing…I think the secret for me is going to be the prepping on Sundays part to streamline a bit more. I will absolutely do an update and I’ll let you know if/how I’m able to accomplish this goal!
